Cymbopogon citratus. A popular ingredient in Asian and especially Thai cuisine. This tropical herb is best grown in a pot, so it can be moved indoors over winter as it isn’t hardy. Allowed to grow from year to year, lemon grass will form a large clump of narrow evergreen leaves up to 120cm tall, coarse in texture and blue-green in colour. Swollen stem bases, taken from an established clump are used in cooking. The leaves are commonly used in teas, stocks, soups, curries, and other dishes to add a tangy, citrusy flavor.
