    Cuminum cyminum. A small, slender herbaceous plant which has finely dissected leaves and white or rose coloured flowers in late Spring. Cumin seeds are ready to harvest in Autumn when the flowers have finished blooming and the seed heads turn brown, they have a pungent, aromatic flavour, slightly bitter but not hot.  It will reach a height of 30cm and a spread of 5-15cm.

    Cymbopogon citratus. A popular ingredient in Asian and especially Thai cuisine. This tropical herb is best grown in a pot, so it can be moved indoors over winter as it isn’t hardy.  Allowed to grow from year to year, lemon grass will form a large clump of narrow evergreen leaves up to 120cm tall, coarse in texture and blue-green in colour. Swollen stem bases, taken from an established clump are used in cooking. The leaves are commonly used in teas, stocks, soups, curries, and other dishes to add a tangy, citrusy flavor.

  • White Horehound

    Marrubium vulgare. A hardy perennial which has aromatic grey-green wrinkled leaves that give the plant an unusual woolly appearance. Small white flowers are borne in dense whorls around the stems in summer from its second year of growing. The flowers are also attractive to bees and other pollinators. A very bitter herb which was once used to flavour beer. An infusion of the leaves can be used to treat coughs and bronchitis.

    Grow in poor, well-drained soil in full sun with shelter from cold, drying winds, and protection from excessive winter wet. It will reach a height of 45cm and a spread of spread 30cm.

    Tanacetum balsamita. Also known as Costmary. A tall hardy perennial  which has grey-green leaves that have a strong mint and balsam scent. Small yellowish daisy flowers are borne in August. It has been widely grown since medieval times in herb gardens and earlier centuries for medical purposes (astringent and antiseptic). Use fresh leaves in salads or dried into pot-pourri, as it retains its aroma. The root’s can be used as a spice and a preserve, it gives a spicy flavour to ale, hence Alecost.

    Grow in a medium soil in a sunny position. It will reach a height of 60-90cm.

    Angelica archangelica. Angelica is in fact a member of the carrot family, and an ancient and versatile herb. Recommended by the RHS to be an excellent attractant and nectar source for bees and other beneficial insects. Angelica has many culinary and medicinal uses, the stems have traditionally been candied for decoration of confectionary, and can even be used to flavour gin! It will self-seed everywhere if allowed to flower so either cut the flowers off before they set or ‘bag’ the flower heads. Plant 60-90cm apart. It will reach a height of 0.9-2.4m.

    Ocimum x citriodorum. A spreading annual which has grey-green, thin, pointed leaves with a distinct and delightful lemon-like aroma and flavour. Good for seasoning poultry and fish dishes and for herbal teas, cold drinks and pot pourris.

    Monarda didyma. Also known as Bee Balm, Crimson Beebalm, Scarlet Beebalm, Scarlet Monarda, and Oswego Tea. A hardy perennial which produces distinctive flowerheads in varying shades of red, each consisting of lots of curving tubular flowers growing from a central point, creating a dome of petals.  If deadheaded regularly it can bloom from early summer to early autumn.

    The lemon-orange scented leaves can be used in salads, teas and cool summer drinks.  They have a savory but fruity aroma which enhances foods such as vegetables and jellies.  The flavour works well with pork and veal.  The flowers can also be used in salads.

    Grow in rich, light moist soil in full sun or partial shade. Mulch plants in hot dry spells to keep the roots moist and cool. It will reach a height of 60-90cm.
