Chervil (Brussels Winter)

Anthriscus cerefolium. Also known as Gourmet’s Parsley. A hardy annual which is an improved European Chervil which has small white flowers, and is slower to bolt and more cold resistant. The dark green, parsley-like leaves, are added fresh or dried to eggs, asparagus, potatoes, salads, and soups. The flavour is like parsley, with mild anise liquorice overtones.

Chervil of the best quality comes from plants grown in partial shade. It will reach a height of 30cm.
