Grown for its numerous delightful but skinny roots, formed in bundles just below ground level, these were once much esteemed as amongst the sweetest, whitest and most pleasant of roots, very popular in medieval times and much prized by the Tudors. Treat gently in the kitchen to preserve its most subtle flavour – try raw in salads (marvellous with rocket) or simply gently pan fry in a little butter, perhaps with just a touch of garlic.
